Recipe Of The Day



Easy Garden Bake
Serves 6 @ 2 pts

Ingredients:
1 cup chopped zucchini
1 large tomato, chopped (1 cup)
1 medium onion, chopped (1 cup)
1/3 cup grated Parmesan cheese
1/2 cup Bisquick Reduced fat baking mix
1 cup fat-free (skim) milk
1/2 cup fat-free cholesterol-free egg product or 2 eggs
1/2 teaspoon salt
1/8 teaspoon pepper

Prep:
Heat oven to 400ยบ. Grease 9-inch pie plate. Layer zucchini, tomato, onion and cheese in pie plate. Stir remaining ingredients until blended. Pour into pie plate. Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
