Menu Monday



It's another Monday and I am craving Garlic Toast. What does that mean, you might ask? Well - that means it's on my menu this week, not once ..... but 2 times! After this week, hopefully things will settle down and I can get back to the regular routine. My headaches have gotten better - thank heavens! My daughter plays softball for our City League and it is finally over. Her team took 2nd place! They played one heck of a game, but don't get me started.....we were at the ball field from 11:30 a.m. till 8:00 p.m. I AM SO OVER SOFTBALL! That pushed me over the edge yesterday. The girls ended up playing ball for 4 hrs straight - in 94 degree temperatures. They were awesome and I am so proud of them. Mommy loves you Mariah! (Mariah is the catcher in both of these photo's)




O.K. back to the menu.... I hope you guys have a great week this week. It is going to be a busy one for use. We are heading to the lake on Monday for a class get together, Tuesday - officer's meeting and let me tell you - that will be a long one....time for annual budget! And then 4th of July - I have a City event I have to attend (all day -uuuggghhh) since I am on the the City's Human Rights Commission. I hope you have a peaceful week. Enjoy!

Menu Monday



I am so sorry - I have been battling with migraines. These have came out of nowhere! I am really struggling right now and don't know where to turn. These have really controlled my life for the last couple of weeks - I had no idea how migraines can really mess up and take over. I am going to be calling the Dr. to see what I can get done because I can't live like this. Sorry for the venting! Thanks everyone for letting me vent and I really hope you have a great week!

Neat Site!!



Just wanted to pass along a really neat site that I have found. Looks like it might help us do our grocery shopping and save us some time. I am all about saving some time and money if I can so I thought I would pass this along!

GroceryWiz is a free Web site allowing consumers to manage their grocery shopping by creating shopping lists and printing grocery coupons before going to the grocery store. The site has hundreds of shopping items organized by aisle category, and the list is customizable to include items unique to each visitor. Upon log-in, visitors' lists are saved. For future grocery shopping items can be added to or removed from the last saved list. GroceryWiz has partnered with most major coupon distributors to allow its visitors to select and print coupons from their computers. To assist visitors, GroceryWiz identifies applicable coupons next to the selected product. Printable coupons are the same coupons that appear in the newspapers. Most grocery stores accept these manufacturer coupons.

Recipe Of The Day



BBQ Chicken Pizza
WW Pts - 5
1 (10-ounce) package refrigerated pizza dough
3/4 c. chopped green pepper (about 1 medium)
3/4 c. thinly sliced red onion (about 1 small)
1/2 c. honey barbecue sauce
1-1/2 c. shredded cooked chicken breast
1 c. (4 oz.) shredded part-skim mozzarella cheese

Prep:
Coat a 12-in. pizza pan or large baking sheet with cooking spray. Unroll dough, and press into pan. Bake at 425º for 5 - 7 minutes or until crust begins to brown. While crust bakes, coat a medium nonstick skillet with cooking spray; place over medium-high heat until hot. Add green pepper and onion and cook, stirring constantly, 5 minutes or until vegetables are tender. Spread barbecue sauce evenly over baked crust; topevenly with chicken. Arrange vegetable mixture evenly over chicken; sprinkle with cheese. Bake 8 additional minutes or until crust is golden and cheese melts.

Serves 6

**You can also add any 0 point veggies to this and enhance the flavor to your tasting!

Recipe Of The Day



Baked Egg Rolls
WW Pts - 1 per egg roll

Ingredients:
1 1/4 pounds ground chicken
2 cups grated carrots
1 1/2 cups drained bean sprouts
4 ounces drained sliced water chestnuts
1/4 cup chopped bell pepper
1/4 cup sliced scallions
3 garlic cloves -- crushed
1 tablespoon water
1 1/2 teaspoons reduced-sodium soy sauce
1 teaspoon sesame oil
1 teaspoon firmly packed brown sugar
1 tablespoon plus 1 tsp cornstarch
1/4 teaspoon ground red pepper
16 wonton skins -- (3 inch squares)

Prep:
In large nonstick skillet or wok, cook chicken over medium heat until crumbly, 5 minutes. Drain and set aside. To same skillet, add carrots, bean sprouts, water chestnuts, green pepper, scallions, and garlic. Cook over medium heat, 3 minutes; return chicken to skillet. In small bowl, combine water, soy sauce, sesame oil, and brown sugar; whisk in cornstarch and red pepper. Pour into chicken mixture; toss well. Remove from heat and set aside. Preheat oven to 450º F. Place 1 wonton skin on work surface; spoon 1/4 cup chicken mixture on bottom third of wonton skin; fold both sides toward center and roll tightly. Place seam-side down on nonstick baking sheet; repeat with remaining skins and filling (rolls can be frozen at this point). Bake until lightly browned, 15 minutes.

Serves 8

* I was a little worried that 1/4 cup mixture would not fit into those 3 in wontons, but they do stretch as you work with them. I did them on the diagonal to have more room to tuck.

Recipe Of The Day



Crunchy Seasoned Oven Fries
WW Pts - 4 (16 fries)

Ingredients:

4 eggs
3 cups cornflake crumbs
6 tablespoons chili powder
2 tablespoons garlic salt
5 1/3 pound potatoes -- cut in 1/2 inch wedges

Prep:
Lightly beat eggs in shallow bowl. In another bowl, combine crumbs, chili powder and garlic salt. Dip potato wedges into eggs. Dip into crumb mixture; coat completely. Arrange potatoes in 1 layer on baking sheets coated with vegetable cooking spray. Bake in 375ºF oven for 20 minutes. Turn potatoes; bake 10-15 minutes longer, until potatoes are browned and crisp and insides are tender when tested with pick. Serve immediately.

Recipe Of The Day



Simple Lasagna
WW Pts - 5

Ingredients:

3/4 package lasagna noodles
2 C part skim milk mozzarella cheese -- shredded
1/4 C nonfat parmesan cheese -- grated

**Filling**
15 ounces nonfat ricotta cheese
1 C nonfat cottage cheese
1/4 C nonfat parmesan cheese -- grated
2 T parsley -- finely chopped or 2 teaspoons dried

***Sauce***
8 ounces extra lean ground beef--or Morningstar Farms recipe crumbles
32 ounces tomato sauce
16 ounces crushed tomatoes
2 T. tomato paste
1 medium onion -- chopped
1 1/2 t. garlic -- crushed
2 1/2 t. dried italian seasoning

Prep:
Sauce: Brown ground beef and drain. Add remaining sauce ingredients to browned
ground beef and stir, bring to a boil, reduce heat, cover and simmer for 25 minutes.
Set aside.
Filling: Combine all of the filling ingredients in large bowl and stir to mix well.
Set aside.
Assembly: Coat a 9x13 pain with cooking spray. Spoon 1 cup of the sauce over bottom
of pan. Lay 4 uncooked noodles over the bottom of the pan (3 lengthwise and one
crosswise). Allow a little space between noodles for expansion.
Top noodles with half of the filling mixture, 3/4 cup of mozzarella, and 1 1/2 cups
of sauce. Repeat the noodles, filling, mozzarella and sauce layers.
Finally top with remaining noodles, sauce, Parmesan and mozzarella.
At this point you can freeze.
To prepare: Thaw overnight.
Cover the pain with aluminum foil and bake at 350º F for 45 minutes, remove foil and bake for 15 more minutes or until the edges are bubbly and the top is brown.
Remove from oven and let rest for 5 minutes before cutting and serving.
